Beef Orzo Salad

Prep time: 20 minutes
Cook time: 10 minutes

Ingredients
3/4 cup fresh lemon juice, divided
2 tablespoons Dijon mustard
1 clove garlic, minced
2/3 cup chopped fresh basil, divided
3 tablespoons olive oil
1/2 pound Laura’s Lean New York Strip Steaks
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground pepper
1 (16-ounce) package orzo pasta
3 green onions, chopped
1/3 cup currants
1/4 cup pine nuts, toasted

Cooking Directions
1. To make the dressing, combine 1/2 cup lemon juice, Dijon mustard, garlic, 1/3 cup basil and olive oil in an electric food processor until blended.

2. Season steak with kosher salt and pepper. Grill, covered with grill lid, over medium-high heat (350°F to 400°F) about 5 minutes on each side or until desired degree of doneness. Slice into 1-inch slices.

3. Cook orzo according to package directions; drain. Add steak, remaining lemon juice, remaining basil and remaining ingredients, tossing gently to coat. Chill before serving, if desired.

Makes 8 servings.

Broiling Directions
1. Preheat broiler 5 minutes.

2. Place steak on a rack in a broiler pan; broil 5 1/2 inches from heat (with electric door partially open) 4 to 5 minutes on each side or until desired degree of doneness.
