Red Beans & Rice with Ground Beef

Ingredients
- 1 lb Laura's Lean Ground Beef
- 3 cans Red beans (15-ounce cans, rinsed)
- 1 Large bell pepper (diced)
- 4 Celery ribs (diced)
- 2 cloves Garlic (minced)
- 1 Large onion (diced)
- 1 tbsp Olive oil
- 3 cups Vegetable stock
- 2 tsps Cajun seasoning
- 1 1/2 tsps Kosher salt
- 1/2 tsp Smoked paprika
- 1/2 tsp Cumin
- 1/2 tsp Black pepper
- 1 Bay leaf
- 1 can Tomato paste (6-ounce can)
- Serve with cooked rice, hot sauce and fresh parsley

Preparation
1. In a large stock pot add the olive oil, onion and ground beef. Cook until browned, add the rest of the ingredients to the stock pot and cook over medium heat for approx 30 minutes. The sauce should start to thicken, taste test for salt and pepper. Served with cooked rice and a sprinkle of fresh parsley. Enjoy!
